- 1/2 cup butter at room temperature
- 1 cup white sugar
- 2 eggs
- 1 tbsp vanilla
- 3 ripe bananas, peeled and mashed
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- Preheat oven to 350F
- In a mixing bowl, cream butter. Add sugar and combine well
- Add eggs, vanilla and mashed bananas. Mix well.
- Stir in flour, baking soda and salt until the dry ingredients are incorporated. the batter may be slightly lumpy
- Line muffin pan with muffin cup liners
- Divide batter into the 12 muffin cups
- Bake for 30 minutes or until done
- Cool muffins in pan on a wire rack for 10 minutes, then take out of pan and continue to cool on the rack
